Japanese hotpots, known as “nabe,” are a beloved culinary tradition that bring warmth and comfort, especially during the colder months. They consist of a simmering pot of broth filled with a variety of fresh ingredients such as vegetables, tofu, meat, and seafood. The communal nature of nabe encourages social interaction, as everyone gathers around the pot, cooking and sharing the meal together. This dining experience not only fosters a sense of togetherness but also allows for customization, with each person adding their preferred ingredients to the pot. During summer vacation, inside restaurants, it’s a little bit cold because of an air conditioner, so hotpots are also enjoyable to have it in summer!

There are several types of nabe, each with its unique flavor profile and ingredients.

ใƒปSukiyaki๏ผšIt is a popular variation, featuring thinly sliced beef cooked in a sweet and savory broth of soy sauce, sugar, and mirin.

ใƒปShabu-shabu๏ผšAnother favorite, involves quickly swishing thin slices of meat and vegetables through a pot of boiling water or broth, then dipping them in flavorful sauces before eating.

ใƒป Chanko nabe๏ผšIt is traditionally eaten by sumo wrestlers.

Each type of nabe offers a distinct culinary experience, showcasing the diversity and depth of Japanese cuisine.

The most characteristic point is that you can add many kinds of ingredients to hotpots. Please imagine, when you use vegetables and meets for your lunch, dinner, those ingredients are always left in a fridge a little bit. To consume those foods, hotpots help your problem. Just put those ingredients with hot water. That’s it! When you have it, you can add any seasoning like soy sauce.

Shabu-shabu is a popular Japanese hotpot dish that combines simplicity with rich, savory flavors. Its name is derived from the sound made when ingredients are swished through a pot of boiling broth. Thinly sliced meat, usually beef or pork, and a variety of vegetables such as mushrooms, napa cabbage, and tofu are the main components. These ingredients are cooked piece by piece at the table, making for an interactive and communal dining experience. Diners dip the cooked items into flavorful sauces, typically ponzu (a citrus-based soy sauce) or goma (a sesame sauce), before eating, allowing for a personalized and flavorful meal.

Selecting the type of soup base is a key aspect of enjoying shabu-shabu.

ใƒปKombu (kelp) broth๏ผšThe traditional soup provides a light and umami-rich foundation that enhances the natural flavors of the ingredients.

ใƒปKimchi or chili๏ผšThose are enjoyable a bit of heat.

ใƒปSoy milk๏ผšIt’s a heartier flavor.

Choosing the right soup base not only influences the taste of the dish but also allows diners to tailor their shabu-shabu experience to their personal preferences.
