1. Hagi Shinkai: Must Visit Restaurant

During my trip to Hagi, I stumbled upon a hidden gem called Hagi Shinkai, just a five-minute walk from JR Higashi-Hagi Station. What caught my eye first was the small white lighthouse standing like a quiet guardian outside the restaurant โ€” a charming landmark you wonโ€™t miss. This place isnโ€™t just any seafood restaurant. Itโ€™s been run for over 30 years by a local fish wholesaler, which means they know exactly how to source the best from the sea. There’s something warm and authentic about restaurants like this โ€” places that stick to tradition and quality over time.

What truly amazed me about Hagi Shinkai was how fresh everything tasted. Iโ€™m not just talking about sashimi. Their signature dish is live squid, served whole โ€” its body sliced into delicate sashimi while the rest is turned into tempura or grilled with salt. Every part of the squid is used right then and there, and you can taste the difference in texture and flavor. Itโ€™s not just squid either โ€” I saw a menu full of seasonal treasures like horse mackerel, mackerel, flounder, filefish, stonefish, abalone, and turban shell. The freshness isnโ€™t just a promise; itโ€™s a guarantee, because they literally take the seafood out of the tank when you order.

One of the coolest features of Hagi Shinkai is the enormous live fish tank โ€” one of the largest in the prefecture, holding a whopping 50 tons of seawater. You can actually watch the seafood swimming around before itโ€™s prepared, which makes sitting at the counter an experience in itself. I loved watching the chefs skillfully reach into the tank, select a fish, and start preparing it just steps away. If you enjoy watching food being made with precision and care, the counter is the place to be. It felt like dinner and a show, with the ocean as the star.

2. Must Order Lunch Combo

During lunch time, you are better to order Lunch Combo. I ordered this one, Lively Squid Combo (ๆดปใใ‚คใ‚ซๅฎš้ฃŸ๏ผ‰.

Look at this picture. Too much squid!!! I’ve never had squid! Grilled squid, squid’s sashimi, White fish’s tempura. To enjoy lunch, that’s too much amount. But I was so satisfied with have fresh foods that I kept working chopstick and having them.

After finishing all the squid sashimi, the staff will come by to collect the remaining body of the squid. Theyโ€™ll then cut it into bite-sized pieces and serve it to you as freshly fried tempura. You really get to enjoy every part of the squid, from sashimi to tempura โ€” itโ€™s absolute heaven for squid lovers. I couldnโ€™t quite finish everything myself, but the good news is that you can take the tempura to go! Just ask the staff, and theyโ€™ll be happy to pack it up for you.

3. Yamaguchi’s Famous Soul Food: Puffer Fish

If you visit Yamaguchi, don’t miss having puffer fish? Have you ever had puffer fish before in your country? I think you haven’t.

Fugu, or pufferfish, is one of Japanโ€™s most famous and mysterious delicacies. Why mysterious? Because this fish carries a deadly poison โ€” and only chefs with a special license are allowed to prepare it. That alone limits where you can eat it. Add to that the fact that fugu is caught in limited quantities, and youโ€™ve got a high-end dish that usually comes with a pretty high-end price tag.

But hereโ€™s the amazing part: in Yamaguchi, especially in places like Hagi, fugu has long been part of the local fishing tradition. That means itโ€™s surprisingly affordable โ€” even though itโ€™s still the same high-quality, carefully prepared fish youโ€™d find in an upscale Tokyo restaurant. For example, while fugu sashimi in most places could easily cost you over 5,000 yen or more, Hagi Shinkai offers it for just 2,200 yen. That price alone is enough reason to make the trip!

Whatโ€™s funny is, fugu doesnโ€™t have a strong flavor. The charm lies in its texture โ€” thin slices arranged beautifully like flower petals. The best way to enjoy it is with a dipping sauce made from ponzu (a citrusy soy-based sauce that adds just the right amount of brightness). Alongside that, youโ€™ll get grated daikon with red chili (momiji oroshi) for a spicy kick, and finely chopped green onions for freshness. Combine it all, take a bite, and youโ€™ll see why people go crazy for this dish โ€” itโ€™s all about subtlety, balance, and a bit of thrill.

4. Conclusion

Totally, Hagi Shinkai was the best seafood restaurant where I’ve never been! If you visit Hagi city, Yamaguchi, you’ll have to add your itinerary!
